Rabia Sofrası began in a home kitchen in Küçükçekmece. Starting with kibbeh and vine leaves, our menu now includes homemade mantı, crispy börek rolls and tray börek. We prepare every dish with the same care, around your plans.
We cook to order
We keep no ready products in the fridge. Preparation begins when your order comes in. We can’t promise immediate dispatch, but your food is prepared specifically for you.
There is a limit to how much hand-shaped kibbeh a kitchen can make in a day. We are open about it and do not accept dates we cannot meet. Overstating capacity would only waste your time.

What takes time when making kibbeh?
The bulgur dough needs to rest or it tears when shaped. Onions for the filling are sautéed patiently over low heat. Each piece is then shaped in the palm, filled and sealed. This last stage takes the most time and is where handwork makes the clearest difference.
What’s the secret to vine leaves?
Fine rolling. We sort and trim the leaves individually, sauté and season the filling with onion, then pack the rolls closely in the pot. A plate holds them down as they simmer, softening the leaves without unrolling them. They rest after cooking so the flavour develops.
